Member of the Endangered Fish Alliance and an ardent supporter of sustainability and conservation practices, driving his culinary philoposhy for seasonal produce and preserving the natural integrity of ingredients. When he's not in the kitchen, he's off globe-trotting and drawing inspiration from the gastronomic offerings he encounters on his jaunts Passionate about Latin American cuisine and fascinated by the vibrancy and depth of Mediterranean cuisine. Currently the Executive Chef of Seasons Bistro, specializing in seasonally-changing North American cuisine and creative drinks.
