Chef Jean-Philippe Patruno upbringing in France by his Italian father and Spanish mother is the foundation of his culinary talent. He brings with him a wealth of valuable experience gained from his time at some of the world’s acclaimed award-winning restaurants. Chef Philippe began his culinary foray at 3-Michelin star Chez Nico on Park Lane, before going on to head up Nico Central and Simply Nico. He later teamed up with renowned restaurateurs Sam and Eddie Hart, opening tapas restaurant Fino to great critical acclaim. After helming the kitchen at Una, he has just started his highly anticipated solo venture in Singapore, Dehesa, as chef-owner. “At Dehesa, there is no half-way in the food we offer. If we choose to cook a particular meat, whether a pig, cow, lamb or fish, we use the whole animal to honour this ingredient. What you see is what you get – no hidden gimmicks, no tricks, just skill and pure passion for food and cooking. It’s as simple as that!”
