Winner of the Rising Chef of the Year award at the World Gourmet Summit in 2014, Chef Brandon Foo is a passionate autodidact devoted to the mastery of seasonal French food and the traditional processes required to make authentic rustic cuisine. A self-taught chef who has been cooking since the age of ten, Brandon has cooked in Michelin-starred restaurants in France, Switzerland and Australia, including Guy Savoy and Au Petit Salut in Singapore and is currently the Chef de Cuisine at the current bastion of traditional French cuisine, Le Bistrot du Sommelier in Armenian Street. Chef Brandon specialises in traditional French cuisine prepared using precision modern techniques. He is constantly on the hunt for the freshest seasonal produce and prepares some dishes several days in advance- he is utterly devoted to preparing only the finest, authentic French cuisine.
