Roasted pumpkin soup with roasted lamb bits and pesto

Thinly sliced marinated veal with roasted cauliflower, rosemary vinaigrette and rocket lettuce

Duck

Duck breast confit with celeriac mousse, black truffle and duck jus

Turbot & Foie Gras

Turbot gazpacho with torched foie gras, lemon sauce and pan-fried romaine lettuce

Sea Bass

Lemon infused sea bass with dehydrated green apple and black olive powder

Lobster

Half grilled lobster gratinated with Parmesan cheese, portobello mushrooms and Parmesan foam

Beets & Citrus

Citrus compote with beetroot granite, raspberries and Cointreau espuma

Former head of catering for “Saint Pierre”, a fine dining Relais & Châteaux establishment. Owner of Tim’s Fine Dining Catering, specializing in bespoke Modern French cuisine with Japanese influence.

We very much enjoyed Chef Tim's take on Modern Japanese fusion cuisine, it was a refreshing take on one of our favourite cuisines. The taste of the food was refined and of great quality, it was nice of him to introduce his dishes and share his inspiration behind the pairing of ingredients. It was convenient to be able to order great wines through Clubvivre as well to match the food.

It was fantastic! Thanks so much for organizing everything. The team turned up exactly on time, set up, did an amazing job and then cleaned before they left. Chef Tim was excellent and explained all the dishes as they came out and all of our guests had a fabulous time. The menu was delicious and the wines worked perfectly. We’ll definitely be doing it again!

Chef Tim and the servers team were absolutely excellent! The entire team was prompt, took the initiative to enquire about the flow of the dinner and evening, professional in service delivery, and immaculate in their clean up. I'd also like to add that their service was discrete, yet attentive, which is exactly what you need in a home setting. I would not hesitate to hire the team again, and I would greatly appreciate if you could relay my feedback to them.

I thought that Chef Tim's assistant, Chef Chu Pei did a wonderful job. She worked diligently and the timing and quality of the meal was perfect. We would definitely recommend her. Martin, the waiter, was good too, although we have had more experienced service from Clubvivre in the past. He was very polite, very happy to help us with what we needed and did many things very well (ensured all drinks were refilled/replaced, served the ladies first, etc.), but there were a couple of minor things that he could improve on (should have offered guests the option of still or sparkling water with their meal, should not have topped up wine glasses with wine from a different bottle). Overall though, another great dinner party from Clubvivre.

We had a wonderful night on our balcony in Sentosa island. Chef Tim’s Roasted hokkaido scallops were amazing. It was so fun watching the chef prepare the food together with my friends. We had a fantastic dinner with Tim last night. We chose Tim from a choice of several chefs and the evening could not have gone better. He was easy to coordinate with before the event and gave us a variety of meal options from which to choose. We also had a vegetarian in the group, and Tim gladly provided us with vegetarian options in addition to other meatier options for the rest of our party. Our meal itself was delicious, and Tim introduced & described each dish prior to serving. He was pleasant & fun to be around, and he cleaned up & packed up all of the leftovers. Tim made the evening fun, delicious, and stress free. I highly recommend him!
